Low Carb Waffles

So I thought I would do a little something different tonight and share a new recipe I found and tried tonight.  As I have mentioned before I am doing a low-carb diet and so far have lost about 10 lbs.  Sexy Nerd and I decided we wanted breakfast for dinner tonight and I thought it would give me a great time to test out a new recipe.  I have been craving waffles!  I love waffles and pancakes, they are something I eat very rarely, but is a huge treat when I do.  I tried a recipe another time for just protein waffles and had to throw them all out because they were horrible.  

Now I do want to give a warning before you go and try to make these.  These do not taste exactly the same as regular waffles nor do they have the same consistency.  They are a bit grainy and you have to flavor them to make them taste how you want them too.  But, for me I was able to get passed that and enjoy eating my waffles for only 3 carbs!  You do what you gotta do to make the lifestyle work.

Tonights menu included coconut and protein waffles and an omelet

Recipe: Coconut  Protein Waffles

Prep time: 5 mins

Cook time: 7 mins

Total time: 12 mins

Serves: 1

Ingredients

  • 3 T coconut flour
  • 1/4 t baking powder
  • 1 scoop whey protein (flavored or unflavored) 
  • 3 eggs
  • 1/4-1/3 c almond or coconut milk
  • spices to flavor
  • 2 packets of Truvia

Instructions

  1. Whisk all the ingredients together until no lumps remain.
  2. Heat your waffle maker and add some coconut oil
  3. Drop the batter into the waffle maker.
  4. Cook for about 4-ish min

Recipe: Sausage, Bacon, and Cheese Omelet

Prep time: 3 mins

Cook time: 7 mins

Total time: 10 mins

Serves: 1

Ingredients

  • 3 eggs
  • 1/4 cup shredded cheese
  • 2 slices/links turkey bacon and sausage
  • salt and pepper

Instructions

  1. Whisk eggs.
  2. Heat skillet to medium and add oil of choosing to keep omelet from sticking
  3. Pour eggs into skillet and let cook till there is barely any runny egg left on top.
  4. Flip eggs and pour the cheese and meat mixture on top
  5. Fold in half and serve.
